APP_VERSION aus Build-Arg statt Hardcoding im Code

Version wird jetzt beim Docker-Build per --build-arg injiziert.
Release-Workflow leitet sie aus dem Tag-Namen ab, Dev-Workflow
nutzt den Short-SHA. Verhindert Version-Mismatch bei Releases.
